They have high morale, but are not as responsive as your own units. However be aware these mercs are far from elite. Just replace your men with discounted mercs and carry on. Desertions can be disheartening at first but it's really not a big deal. You can even hire ships if you're near the coast.
You can recruit them in christian lands or in the holy land. If any units desert, you just hire more mercs for cheap. What you should do is take the bare minimum number of your own units to form a crusading army then recruit a ton of merc troops. You can fill your army with crusader sergeants, crusader dismounted knights, and crusader knights. Crusading generals get access to the special pool of crusader mercs which are heavily discounted. The secret to crusades is to recruit mercenaries.
